The small viniculture area (6 hectares) is cultivated in such a way to promote biodiversity of the soil. For example the producer does not use any herbicides (all weeds are extracted by hand !). In order to keep the freshness of fruit present, new oak is used very moderately (50%). This producer is situated in Premeaux Prissey just under Nuits Saint Georges. As for such location, the portfolio of this producer is limited to almost only red wines.
This is a slender, translucent wine. Fruit flavors are dominant (blackcurrant, cherry, blueberries, cranberry and feather moss) with some forest floor and juniper in the background. The light structure is based on the fresh acidity which allows the wine to be very flexible when it comes to food pairing. The deptak of flavors is connected with the age ow vines (average 50 years old). This wine is produced in a small, boutique volume - 7500 bottles yearly. It represents a modern style of red Burgundy - showing the terroir of the parcel with minimal oak use and lack of excessive extraction of the fruit. It is definitely an elegant wine. The small area (6 hectares) is cultivated in such a way to encourage biodiversity of the soil.
